High ratio shortening is designed specifically for bakers. It is 100% fat with added emulsifiers and no added salt or water.
So why does high ratio shortening work? Well for starters high ratio shortening contains micro emulsifiers that allow your mixture to hold more sugar and liquid. That means it is more temperature stable. It also helps to hold more air upon whipping which will increase volume. It doesn't give your icing a greasy taste. It is white in color so it won't change the color of your icing either.
It is also used in high ratio cake recipes. It will give these cakes a finer smoother texture and also help you keep them moist.
